Bulletproof Coffee

I bet you never thought you’d hear someone from Dr. Lipman’s office touting the benefits of coffee, but we are constantly learning and evolving here, and Bulletproof Coffee is our latest experiment!

While our cabinets are full of tea, we do have an espresso machine at the wellness center and it gathered dust for a long time. Until one day, when a patient who had reversed his rheumatoid arthritis by following a Paleo diet told us about his new morning beverage. He described a drink that sounded quite odd: coffee + MCT oil + grass-fed butter.

Be Well Bulletproof Coffee Recipe:

Makes 1 serving
– 1 shot of espresso (or one cup of organic coffee)
– 1 tbsp MCT oil
– 1 tbsp unsalted grass-fed butter (like KerryGold butter)

Combine all three ingredients in a high-speed blender for about 20 seconds, until the drink takes on a frothy consistency. Enjoy!

Who is Bulletproof Coffee good for?

This is a good option if you don’t normally have breakfast, or if you practice intermittent fasting. It’s a good option if you are hooked on coffee and want to upgrade the health benefits of your morning cup. It’s good if you have very low energy or brain fog in the morning. (Even though I’m quite sensitive to caffeine, I don’t get jittery from Bulletproof Coffee. But if you’re not a fan of coffee, no pressure to try this!)

When is the best time of day for Bulletproof Coffee?

We recommend having this drink first thing in the morning. You may find that it gives you a boost of energy that will last for hours. By having this drink in the morning, it will signal to your body to burn fats for energy and will boost your cognitive function.

Why do we like MCT Oil?

MCT’s (Medium-chain triglycerides) are a unique form of fat that require less energy and enzymes to be digested. As a result, they are a readily available source of energy, leading to an increase in metabolism and providing quick energy replenishment. Unlike other dietary fats, MCTs don’t get stored as fat in the body, they get burned for energy. MCT’s improve satiety, which means less hunger and less cravings, two important components in healthy weight management.

Why do we like grass-fed butter?

Butter from grass-fed cows supplies a ratio of omega-3 to omega-6 fatty acids that’s much healthier than what comes from cows that are fed corn or soy. Grass-fed butter is a good source of carotene, vitamin A and vitamin K2. While we often encourage people to avoid most dairy, grass-fed butter is generally not a problem because it contains fats, with only minor traces of dairy proteins. You’ll also find the color is a more vibrant yellow and the flavor is much better than butter from grain-fed cows.

Isn’t it too much fat?

It’s a lot of fat! The caveat I would make is that you should not be having butter-coffee along with a big heavy meal — I think of this as a “mini meal” or meal replacement. More and more research is showing that refined carbs and sugar are making us fat and leading to heart disease — not fats. Dr. Lipman has been working to set the record straight on fats:

  • I don’t understand why you need to use butter instead of cream. It’s the same thing. If you’ve ever made homemade butter you’d know it simply well-churned cream.

    Can anyone tell me if Kerry Gold Butter contains gmo’s. I believe I read that. Also, I have switched to cold brew coffee. Rather than the hot water releasing certain bitter taste into the beans, the cold method simply uses filtered water and ground beans sit in a filter in water for 12 hrs. I have noticed how much less bitter the coffee tastes to me. You can store the glass container in fridge for a few days too.

    I cannot buy the MCT oil where I stay at the moment: is it ok to use another/similar oil or just leave it out?

  • Because butter has less of the milk proteins (casein). Some people use cream – but cream may have some carbs as well as the casein. Some people who are extremely sensitive to casein use ghee. The butter or ghee helps to put you in a state of ketosis. Chris Kresser uses grass fed, raw cream in his coffee. Kerry Gold butter is from Ireland, where the cows are mostly grass fed. Dave Asprey got the idea from the Yak butter tea he drank while in Tibet.

  • I’ve been drinking Bulletproof coffee for about 2 years now. MCT oil kicks it. Even my sister, who was a sweet flavored coffee person, is addicted to bulletproof. (that did amaze me…) The MCT oil is pure brain fuel… You can order it from Dave Asprey’s website, He also sells mycotoxin free coffee.

    Do you melt the butter before putting it in the blender, or does the hot espresso essentially melt the butter? Also, would it be too much to make the Bulletproof coffee with two shots of espresso? I usually need a lot of coffee in the morning (which is why this recipe sounds so intriguing. Also, would you recommend just having the Bulletproof coffee and not having a morning Sustain smoothie in addition?

    The coffee wil melt the butter. I don’t use expresso for my BPC, but I don’t see why you couldn’t use two shots. However,you may find that with the healthy fats (gf butter & MCT oil), you might need as much coffee anymore.

    Tip: Dave recommends preheating the blender with hot water. I’ve been preheating my latte mug with hot water as well. I usually brew my coffee with a French press. So while it brews, I heat water in the mug in the microwave and then divide it between the mug & blender. It seems to help keep the coffee from losing heat during the blending.

    Dave’s coffee is not bitter at all. Kerrygold has very small amounts of GMO possibly 3%

    Helen’s post is correct. And it’s not just the butter that creates the magic. It’s the butter & the MCT oil.

    I couldn’t make this in the morning because blending would be too loud (I live in an apartment). Can this be made & stored in the fridge for iced coffee in the morning?

    I use Humboldt Organic Pasture-Based butter. Mainly because it is Organic. I’m not sure if Kerry Gold is or not?

  • As I am lactose intolerant, I’m wondering if there are other alternatives to butter/ghee. I would like to try coconut oil, for example, but I don’t know if it may have similar effects in terms of stimulating ketosis… Also, as I live in Switzerland, I’m wondering where I can find MCT oil or an equivalent.

    Hi Chris,

    Instead of butter or ghee, coconut oil is a great choice. Be sure to get unrefined coconut oil, it’s an excellent source of healthy fat. Unfortunately, I’m not sure where you can find MCT Oil in Switzerland but coconut oil can be used in place of it if you are unable to find it. ~ Jackie, Be Well Coach

    Chris, lactose intolerance is an inability to digest milk sugar. There is no galactose, lactose in butter or ghee. So no worries there. You may have an intolerance to milk protein. Many people are allergic to the Casein portion of milk protein, especially if you are getting your dairy products from northern Europe. Cows from Switzerland are type 1 Casein and much less allergenic. I would use the butter and see how it goes. If this doesn’t work try the Ghee or clarified butter. Ghee is just butter with the milk proteins removed.

  • great – thanks for this. I’ve never tried to figure out if I’m lactose intolerant or intolerant of the milk protein. I will try! btw, if you like the coconut taste I have found that coconut oil (unrefined, of course) works really well! Having trouble keeping it on hand as a result so this will be a good backup…

    Chris Maggos: I’m also in Switzerland. you can get all the bulletproof products at be careful on the direct delivery to CH – customs and the post can make your purchase expensive.

    Thanks for the info. I have a few co-workers that won’t have butter as they avoid milk.
