These Carrot Cake Bliss Balls are the perfect afternoon snack: packed with protein and healthy fats to carry you over the midday hump.
Carrot Cake Bliss Balls (Makes about 20)
- 2 cups raw cashews, soaked in water in the refrigerator overnight
- ⅓ cup sunflower seeds
- 1 cup carrot, grated
- 1 cup toasted coconut
- 3 medjool dates
- 3 Tbsp coconut oil, melted
- 2 scoops Be Well Vanilla Protein Powder
- 1 tsp maca powder
- 1 tsp vanilla bean powder
- 1 tsp cinnamon
- ½ tsp cardamom
In a food processor, process the cashews into a chunky butter. Add sunflower seeds, carrot, and coconut and process until crumbly. Add all other ingredients and process until a dough forms.
Using a cookie scoop, scoop dough into balls or form them by hand. Place balls on a parchment-lined baking sheet and chill in freezer for 1–2 hours until set. Store balls in airtight container in the freezer. Remove from freezer a few minutes before eating.
