Most Caesar salad dressings are chockfull of inflammatory ingredients. From poor quality oils, cheese, cream, and more than likely farmed anchovies, you are looking at a disastrous combination for your health. Luckily, this makeover is simple, delicious, and nutritious. Toss this dressing with a bowl of leafy greens and you have an easy meal that includes all staples of the Be Well Ideal Plate: Vegetables, Healthy Fats, and Protein. Enjoy!
1 can wild caught anchovies cured in olive oil (include oil in the dressing)
Juice of 1 lemon
2 tbsp chopped fresh parsley
1 1/2 tbsp raw apple cider vinegar
1 tbsp nutritional yeast
1 tsp olive oil
4 fresh basil leaves
Sea salt and Pepper to taste preference
Combine all ingredients in a blender or food processor and blend until smooth. Taste test and adjust seasoning to your preference, and serve on a bowl of leafy greens.
