The cure for what ails us — both in our bodies and in our nation — can be found in the kitchen. It is a place to rebuild community and connection, strengthen bonds with family and friends, teach life-giving skills to our children, enrich and nourish our bodies and our souls. Yet, in the twenty-first century, our kitchens (and our taste buds) have been hijacked by the food industry. In 1900 only 2 percent of meals were eaten outside of the home; today that number is over 50 percent.
Coffee: is it good or bad for us? You might get media whiplash trying to figure that out. The truth is, I find this subject to be as confusing as you probably do. After all, the media certainly doesn’t help clarify whether America’s favorite cup of joe is going to land you in the Doc’s office or set you free with a clean bill of health. And when one night’s news report conflicts with another’s blatantly contradictory messages, it is no wonder why so many of you shrug your shoulders in utter confusion as you refill your morning mug and get on with your day! And with the velvety aroma and promise of energy from that caffeine jolt, you might rather just assume that there must be something to those beneficial claims…
If all Doctors followed the latest cholesterol treatment guidelines, and all their patients took their prescribed statin medication, there would be 3.5 million more diabetics in America. But wait! There is another pill (injection actually) that has been shown to reduce the risk of diabetes. And it’s only about $50,000 per year per patient. Let’s see 3.5 million times $50,000. What does that bring us to? Pharmageddon!
We have all been led to believe that cholesterol is bad and that lowering it is good. Because of extensive pharmaceutical marketing to both doctors and patients we think that using statin drugs is proven to work to lower the risk of heart attacks and death. But on what scientific evidence is this based, what does that evidence really show? Roger Williams once said something that is very applicable to how we commonly view the benefits of statins. “There are liars, damn liars, and statisticians.”
