A gremolata is a traditional Italian condiment typically made with chopped lemon zest, parsley, and garlic. This pomegranate gremolata is a festive ‘sprinkle’ that is perfect to serve with roasted and grilled meats or fish.
Pomegranate seeds have a bounty of health benefits, including regulating blood sugar, reducing inflammation, and boosting the immune system. Feel free to change up the citrus zest by subbing orange, lime or even grapefruit zest for the lemon zest.
- ⅓ cup flat-leaf Italian parsley
- ¼ cup fresh mint leaves
- 1 T. lemon zest
- 1 T. minced shallot
- ½ cup pomegranate seeds
- Pile the parsley, mint, lemon zest, and shallots on a cutting board. Chop everything together and then toss into a bowl. Mix in the pomegranate seeds. Refrigerate until ready to serve. Best used within five days of preparation.
