Pumpkin Chia Pudding Recipe: A Healthy Halloween Treat

Pumpkin Chia Pudding
 
Ingredients
  • 1 cup coconut milk
  • 3 tbsp chia seeds
  • 1½ tsp pumpkin pie spice
  • 1-2 tbsp pure maple syrup
  • ½-1 cup pumpkin puree
  • ½ tsp vanilla extract
  • 1 pinch sea salt
Instructions
  1. Soak the chia seeds in coconut milk. Whisk in pumpkin puree and spices.
  2. Stir in maple syrup and vanilla extract.
  3. Store the mixture in the refrigerator for one hour.
