- 1 cup coconut milk
- 3 tbsp chia seeds
- 1½ tsp pumpkin pie spice
- 1-2 tbsp pure maple syrup
- ½-1 cup pumpkin puree
- ½ tsp vanilla extract
- 1 pinch sea salt
- Soak the chia seeds in coconut milk. Whisk in pumpkin puree and spices.
- Stir in maple syrup and vanilla extract.
- Store the mixture in the refrigerator for one hour.
