Coming out of 10 years of chronic illness has made me look at life in a different way. I’ve realized that things happen for us, not to us; something new comes into our lives or something happens to make us change. For me it was Lyme disease, PCOS, hypothyroidism, leaky gut, and so much more. When I had to cut out gluten, dairy, soy, sugar, and corn, I thought my life was ending but I learned that we can come out of any struggle in our life on the other side of it and prove to ourselves that we can not only survive, but thrive.

For those of you conquering your gluten allergy, it’s important to remember that there are gluten-free alternatives for foods like pasta and bread. Pasta is such a quick and easy food to make, so I love having gluten-free alternatives when I want boil up a quick pot of penne for dinner. Pasta is great because it has a neutral flavor and there are a million ways to prepare it. For this recipe, I even cook the penne in vegetable broth to add extra flavor to the noodles. I toss the pasta with black rice and lima beans to add new textures to the dish.
I love making versatile recipes that can be eaten as snacks, appetizers or even full meals. My Carrot n’ Quinoa Stuffed Mushrooms are one of those great recipes! Stuffed mushrooms are a great option for appetizers at a dinner party or a quick afternoon snack. Many appetizers are heavy on gluten or dairy, so they aren’t allergy-friendly or healthy but this recipe is super easy to make and packed with a bunch of my favorite healthy super foods including quinoa, wild rice, carrots, olive oil, and mushrooms. These mushrooms are filled to the brim with a handful of nutrients! They are also free of gluten, dairy, and soy, so they’re a great option for those of you who have allergies or food sensitivities.
